WEDDING CAKES
What makes your wedding cakes special?
Our cakes look great and taste great but what makes them really special are the following:
Gluten-free
Can be dairy-free and nut-free
No leavening or preservatives are added: egg whites and yolks are separately whipped to provide the height
Flowers used for decorations are grown at my farm free of pesticides and herbicides. Edible varieties are available.
All cakes are baked, composed, and decorated by me!

Further customization may be possible. For example, mocha buttercream or chocolate ganache are additional icing options.
How big should our cake be to feed our guests?
Traditionally, a 6” Top Tier is saved for later consumption or freezing (~ 8 portions)
10” diameter serves ~ 24 portions
14” diameter serves ~ 40 portions
18” diameter serves ~ 60 portions
For additional portions, tiers are additive, up to a total of 4 tiers (each tier must be 2” larger than the next tier up). For more than 120 guests, we can provide 10” side cakes.
How many cakes do you deliver on the same day?
We will only accommodate one wedding event per weekend.
How far in advance do we need to order the cake?
We will lock you into our schedule when we receive a 50% deposit on your order. Our expectation is that ordering 6 months in advance would likely allow us to accommodate your needs. If you contact us with less notice, we will try to help you if our schedule permits.
You do not have to decide on a particular combination of flavor, filling, icing, and decoration until a month before the delivery date. At that time, the remaining balance must be paid. You will need to determine the cake size and the number of tiers at the outset as this will determine the amount of the required deposit needed to secure our services.
What is your culinary background?
I established and operated a full-line bakery in Ithaca from 1975 to 1985 with baking responsibilities for bread, pastries, and cakes. The recipe of our cakes is an evolution of our cakes from that period: we now specialize in gluten-free and other allergenic-free options.
How many wedding cakes do you make a year?
We have been making large special order cakes since Pendragon’s Bouquet’s beginnings.
How soon before the wedding will my cake be baked?
Your cake will be baked the week of your wedding. The final assembly and decoration will occur within 24 hours of delivery date.
What kind of ingredients do you use? Do you offer organic, vegan, or gluten-free options?
We only offer organic and gluten-free options. We dot bake any gluten-containing cakes, pastries or goods on our property in order to maintain our commitment to gluten-free options and to reduce the risk of cross-contamination for those with Celiac Disease.
We have no idea what we’d like! Can you offer some design suggestions based on our budget and theme?
We are happy to offer some suggestions based on your budget and theme.
Are your cakes finished in buttercream or with fondant?
We don’t use fondants. We try to minimize the amount of added sugars in our cakes.
Can you make sugar flowers?
We specialize in pesticide-free and herbicide-free edible, natural flowers from our own farm.
We’d like to use fresh flowers on our cake. Can you work with our florist to do so?
We prefer to use our own non-toxic, herbicide-free, pesticide-free, edible flowers, available in season. We understand that commercial growers are required to spray their flowers with chemicals.
Who will cut the cake?
For a fee of $40, Jonathan will cut the cake for up to 2 hours after delivery.
Is there a delivery fee?
Yes, there is a delivery fee.
Is there a discount if we order both the wedding cake and the wedding flowers from Pendragon’s Bouquet?
Yes, there is a 5% discount on the total order. We offer a large variety of annuals, perennials and bulbs that are in-season during the spring, summer and fall growing season. A list of annuals, perennials and bulbs can be made available to inquiring parties.
